Date Walnut Chocolate Chip Cookies

This recipe is comes via Date Sweetened Chocolate Chip Cookies | Stir It Up!.

The recipe makes 12 small cookies, but I don’t know what became of them all, so maybe you should double it. Yes you should.

Ingredients

  • 12 pitted dates
  • 1 c. walnuts or pecans
  • 1 egg
  • 1 t. vanilla
  • 1/8 t. salt
  • 1/4 t. baking soda
  • 4 oz dark chocolate chips

Directions

  1. Blend dates and walnuts in a food processor until finely ground. (It might start to form a paste, but conversely, don’t worry if it’s a little chunky.)
  2. Add egg, vanilla, salt and soda and blend to combine. Fold in chips. Spoon onto parchment covered cookie sheets.
  3. Bake at 350 for 9-11 minutes. You want them to just turn golden and yet still be soft in the middle.
  4. Let cool before serving. These cookies are still moist and chewy a day later…and I don’t know about beyond that. I don’t think I’d ever get them to last that long.

I know, I wrote the wrong amount of salt! I almost forgot to write the chocolate chips down there, too.

So here are some stats – no gluten, no dairy, no grain, no refined sugar. Nutrients galore and approximately 18 grams carbohydrate, 4 grams of protein and 8 grams of fat per serving, which is (cough, cough) 2 cookies.

The Verdict

In last night’s taste test, these cookies were pitted against Almond Butter Banana Cookies (with chocolate chips added) and Chewy Chocolate Chip Cookies for a three way head-to-head-to-head battle with a judges panel of 5.  All were deemed tasty and edible.  The general consensus seemed to be:

  1. Date Sweetened Chocolate Chip Cookies (winner!)
  2. Chewy Chocolate Chip Cookies (runner-up)
  3. Almond Butter Banana Cookies

      Yeah, I just started experimenting with Paleo baking and a lot of the recipes are not good. This one’s a winner!
